The classic French version of a tartare is challenged here. In this recipe, it is served with sauerkraut, lingonberries, sumac mayo and Gammel Knas, which gives the tater a more acidic touch.

Ingredienser

  • 50 g finely grated Gammel Knas
  • 50 g mayonnaise
  • 2 tsp. sumac
  • salt and black pepper
  • 300 g beef inner thigh
  • 1 dl sauerkraut - squeeze out the moisture beforehand
  • 200 g of mushrooms
  • 1 tbsp. olive oil
  • 50 g lingonberries, fresh or frozen
  • 4 tbsp. watercress

Fremgangsmåde

  1. Spread Gammel Knas in a small baking pan with baking paper, and bake it for 7-8 minutes at 180 degrees, until it is melted and golden.
  2. Let it cool until it becomes crisp and break it into smaller pieces.
  3. Stir mayonnaise together with sumac, and season with a little salt and black pepper.
  4. Cut the meat into very fine cubes, and toss it together with the sauerkraut and a little salt and pepper. Clean the mushrooms thoroughly and pat them dry.
  5. Quarter one half and cut the other half into super thin slices with a mandoline iron. Heat the oil in a pan and fry the mushroom quarters over a high heat on this one side only.
  6. Garnish the tartare with fried and raw mushrooms, mayonnaise, lingonberries and crispy Gammel Knas. Garnish with cress.
